100% Hands on Sous Chef , who is the principal assistant to the Executive Chef. The Sous Chef is responsible for following and enforcing polices and procedures. Responsible for shift management, staffing, scheduling, labor cost containment, training, and communication. Must have the ability to maintain composure, solve practical promblems and deal w/ a variety of variables in a fast pace environment. As directed, the sous chef will assist the Exec. Chef with menu development, costing, portion control, ordering and inventories. Min 2 years experience, stable progressive work history in a high volume, fine dining atomosphere.
